Fruit Loaf

Using a coffee mug!

2 mugs of mixed dried fruit

2 mugs of milk

1 mug of muscovado sugar

1/2 mug of light soft brown sugar

LEAVE TO SOAK FOR AT LEAST 1 HOUR

3 mugs of self raising flour into the mix

Stir until all combined 

Pour mixture into a lined loaf tin 

Bake at 160 until a knife pulls out clean. 

Easy!

Granola

400g rolled oats

125g whole almonds

100g sunflower seeds

100g pumpkin seeds

50g sesame seeds

1 tbs wheatgerm

125ml sunflower oil

250 ml Honey

50 g brown sugar

pinch of ground cinnamon 

Handful of dried fruit

Mix together oats, almonds, seeds and wheatgerm in a big bowl

Bring the oil, honey, sugar, cinnamon to the boil in a pan, stirring constantly 

Pour the wet mixture over the dry and stir in. It should be sticky, if the dry ingredients hasn’t absorbed all the wet then just add more oats

Spread the mix evenly across a baking tray (with parchment)

In the oven at 160 for 45 mins, then a further 45 mins at 140

Place on a cooling rack overnight

Crumble all up into a vessel of your choice

Add the dried fruit and other treats if you like

Banana Loaf

150g Unsalted butter

180g Caster sugar

3 Eggs

3 very ripe Bananas mashed up

110g yoghurt and milk mixed together (50/50)

1 very large teaspoon of bicarbonate of soda

350g plain flour

Line a loaf tin with parchment 

Mix the butter and sugar together until creamy and fully combined. 

Put the eggs in one at a time, mixing them in with every addition. 

Then mix in the Banana and yogurt&milk. 

Fold in the flour, Bicarb and a pinch of salt. 

Put the mixture into the loaf tin

In the oven at 180 for 45 mins or until a knife come out clean when you stab the loaf. 

Out the oven and cool.

Breakfast Bar

375g Unsalted Butter

375g Peanut Butter

225g Honey

400g Brown Sugar

600g Porridge Oats 

900g Tropical Mix (from Matas)

Melt the Butter, Peanut Butter, Honey, and Sugar in a pan on a very low heat.

Mix the oats and tropical mix together in a very big mixing bowl. 

Once the everything has melted in the pan, mix it in with the dry ingredients. 

Place the mixture on a baking tray (with parchment) and make it all flat and even

In the oven for 30 mins at 160

Done.

Brownie

750g Unsalted Butter

800g Chocolate (70%)

600g Caster Sugar

9 free range eggs

3 tea spoons of Vanilla extract

375g Self Raising Flour

Melt the butter and Chocolate in a large metal bowl in the oven at 180c.

Mix the sugar in the with eggs until its like syrup.

Add vanilla extract to the egg and sugar mix.

Take melted chocolate and butter mix out of the oven and mix the eggy sugar into it.

Sift flour into the mix bit by bit, until its all combined. 

Slop that mixture into a baking tray (lined with baking parchment).

In the oven for 15 mins.

Done.
